"shop" is not a page, but rather an archive template page in the Woocommerce world/environment. It's one of those built in things that uses the reserved 'shop' slug, and in previous exploration I found no way to change this. It is not intended to edited with Visual Composer. You'll find that there is no "Edit" link on that page when logged in. It's a system generated archive that applies to all other product categories as well.
I can probably trick the system again to pull it off. It's not a simple task to please be patient while I work on it.

As we discussed and learned, there is a custom shop "page" that can be appended on top of the archive itself.
So, the above wire model becomes fairly straightforward with minimal complication and adjustment.
