As per your instructions I will hold off on changing any records until we can retrieve the MX records from the previous registrar. You won't "lose" any existing emails if they're not retrieved, only that any emails sent or received at "emails@allsaints.us" wont go through. Regardless, my recommendation is to get in contact with the IT person you mentioned to gain access to the MX records at the previous registrar. Once those are in place everything will be working smoothly.
